If I shouldn't "set approval for all", why should I use revoke.cash?

In your last scam announcement you write that you shouldn't sign anything that says "Set approval for all". When I try to revoke on etherscan the message I'm signing is "Set approval for all". So I don't even dare to risk revoke approvals due to this. What is the right way to do this? How can I trust eterscan or revoke.cash website?

This is a great question, I think it helps to take a look at the transaction before doing it. I actually use rabby wallet, more now which is made by debank, it offers an easier way to see what your are signing. It also allows you to switch on the fly between metamask and rabby, for those situations where a site only has metamask revoke.png

You are doing this the right way. When you are revoking approvals, you are still using the Set Approval for All function, you are just setting the parameter to "a no" instead of "a yes."

Excellent observation. However Etherscan and revoke.cash have a good track record for revoking the permissions. I have used both.
